500ml port
1 teaspoon black peppercorns
2 tablespoons balsamic vinegar plus 2 teaspoons
2 medium-size radicchio
125g Iberico ham or thinly sliced coppa or prosciutto
200g Gorgonzola
3 tablespoons extra-virgin olive oil
85g rocket leaves



















TO SERVE:

Method


Cut any stems off the figs, then cut a cross about 1cm deep in the tops of the figs.Find a saucepan that is large enough to be able to place the figs in one layer, but don't leave them in at this stage.
